The short answer
Specialty coffee is coffee valued for distinctive quality, careful production and a transparent story from origin to cup. A score can help describe quality, but it is not the whole experience. Origin, harvest, processing, roasting, freshness and brewing all shape what you taste.
For us, specialty coffee is also personal. Nimmica grew from Colombian family heritage and a wish to bring the character of that origin into an everyday cup here in Belgium.
What does an SCA score mean?
Coffee professionals evaluate attributes such as aroma, flavour, acidity, sweetness, body, balance and defects. The familiar 100-point scale has traditionally used 80 points and above as the specialty threshold.
Nimmica Esencia carries an 84+ SCA score. That number is useful evidence of quality, but we never want it to become a wall between the coffee and the person drinking it. You do not need a tasting wheel to know whether you want a second cup.
Specialty starts before the coffee reaches Belgium
Quality cannot be added at the end. It begins with healthy coffee plants, selective harvesting and careful processing. Decisions at origin affect sweetness, clarity and consistency long before roasting.
Our story starts in Colombia, with family roots connected to the Sierra Nevada de Santa Marta. This mountain region rises dramatically from the Caribbean coast and creates a remarkable range of climates and growing conditions.

Why traceable origin matters
“Colombian coffee” tells you the country. Specialty coffee should help you understand more: the region or producer, the variety when known, the process, the harvest and the people behind it.
Traceability does not automatically guarantee that you will love every cup. It gives quality a context and makes accountability possible. It turns coffee from an anonymous commodity into the result of real work.
Roasted in Belgium, in small batches

Is specialty coffee always light and fruity?
No. Specialty describes quality and care, not one fixed flavour. Some coffees are floral and fruit-forward. Others taste of chocolate, nuts, caramel or dried fruit.
- Esencia is smooth and balanced, with chocolate, walnut and dried fruit.
- Finca is richer and more intense, with dark cherry, chocolate and caramel.
- Rosada is a rare Pink Bourbon with passion fruit, honey and floral notes.
How do you choose specialty coffee without becoming an expert?
Start with two ordinary questions:
- How do you make coffee at home?
- Do you want smooth and familiar, richer and more intense, or rare and adventurous?
Your answer is enough. The website should do the translating for you.
Frequently asked questions
Is specialty coffee stronger?
Not necessarily. “Strong” can mean roast flavour, bitterness, concentration or caffeine. Specialty refers to quality and character, not simply strength.
Is specialty coffee more acidic?
Some coffees have bright fruit acidity, but acidity does not have to mean sourness. Roast, brewing and origin all influence the result. Esencia is designed as a smooth, balanced entry point.
Does a higher score always mean I will prefer the coffee?
No. A score describes assessed quality, not your personal taste. A rare, high-scoring coffee can be fascinating while a balanced everyday coffee may be the bag you finish first.
How fresh should coffee be?
Coffee needs a little rest after roasting and then gradually loses aroma. Keep it sealed, dry and away from heat. Buy an amount you will comfortably use rather than storing a large open bag for months.
